Pomegranate cupcakes with a white and dark chocolate ganache frosting – TasteMade contest

If you follow tastemade you already know that they started a weekly competition where they will announce an ingredient and followers who wish to participate should make a dish with that ingredient, photograph it or take an Instagram video and hashtag infinitemenu on Instagram for the chance to be a winner and have your recipe made in their studios …. So I started cooking and here is the recipe I came up with …

Ingredients & Directions:


  1. 115 gm Softened butter
  2. 3 eggs
  3. 1 tsp vanilla
  4. 1 cup of freshly squeezed pomegranate juice
  5. 2 cups of flour
  6. 2 tsp of baking powder
  7. pinch of salt
  8. pinch of cinnamon
  9. pinch of freshly grounded nutmeg

White chocolate Ganache frosting

  1. 440 gm white chocolate
  2. 150 ml cream
  3. A pinch of salt
  4. 1 tsp of pomegranate juice concentrate

Dark chocolate Ganache frosting

  1. 200 gm dark chocolate
  2. 200 gm milk chocolate
  3. 150 ml cream
  4. A pinch of salt


Start by beating the butter in an electric mixer then add the eggs one at a time, on low speed, then add vanilla, pomegranate juice, 2 cups of flour, 2 tsp of baking powder, a pinch of salt, cinnamon, and freshly grounded nutmeg.

Bake in a preheated oven on 140 c for 25 minutes let it cool completely before frosting.

Ganache frosting:

Chop chocolate and add warm cream to it and let it sit for a minute then start stirring until you get a dark chocolaty and smooth ganache when it has cooled down you can whip it in an electric mixer until it becomes smooth.. don’t over beat as it will turn to butter….

The direction for both ganache frosting are exactly the same with one variation for the white chocolate where you add the concentrate while whipping the ganache after it has cooled down.

Assemble your cupcakes by placing a small ball of the dark chocolate in the cupcake Center then top it with white chocolate frosting and garnish with pistachios and tart pomegranate seeds …. super yummy and full of contrasting flavors sweet, rich, bitter, and tangy …
