The BEST chocolate cake EVER

Happy Valentine’s day guys I am back with the BEST chocolate cake you can ever have in your life, it is moist, light, decadent and super luxurious, you have to get up buy the ingredients (as if you don’t have dark and milk chocolate bars in your pantry) and make it right now! Its beyond easy to make for special occasions or have it all to your self on valentines; cant think of a better way to spend this commercial holiday (are you sensing any bitterness here? I don’t think so because I have this masterpiece in my fridge and you don’t!!)

I have never been a fan of butter cream frosting or even whipped cream ones they just don’t do it for me!! But this frosting is a winner it has the perfect balance between dark and milk chocolate, it still has little butter 😉 we cant go completely without it, can we now!  Basically its a thick ganache.

Frosting:

  1. 1 cup heavy cream
  2. pinch of salt
  3. 2 tbsp light syrup
  4. 280g dark chocolate – 70% cocoa (Lindt)
  5. 280g milk chocolate (Lindt)
  6. 1 cup confectioners’ sugar
  7. 200g cold butter (1 cup)

Cake:

  1. 2 cups unsweetened yogurt
  2. 340g dark chocolate – 70% cacao
  3. 1 cup unsalted butter (200g) – room temperature
  4. 1/4 cup cocoa powder dissolved in:
  5. 3 tbsp boiling water
  6. 5 eggs because my mother doesn’t like eggy cakes and insists on cutting back the egg amount 😛
  7. 1 1/2 cups sugar
  8. 2 cups flour
  9. 3 tsp baking soda
  10. 2 tsp baking powder
  11. 3 tbs strong brewed coffee
  12. pinch of salt
  13. Fresh strawberries between the layers of the cake

Directions:

Preheat oven at 350F. Oil and flour your baking pans (I used 3 baking pans the batter in the third one was slightly thin so I took it out of the oven after 20 minutes)

In a saucepan add heavy cream, salt and light syrup. Bring it to a simmer. In a food processor add the chocolates. With the blades running add the hot heavy cream through the tube; process it for 1 minute (my chocolate didn’t dissolve completely so I placed half of the mixture in a water bath to warm up and melt then transfer back to the food processor).

Add the confectioners’ sugar and process it again. While the machine running add the cold butter little by little and process until all the butter is incorporated and dissolved. Pour it in a bowl and let it rest at room temperature (in a cool area of your house) to gain consistency. About 2 hrs.

Start making the cake. In a large bowl add the chocolate and butter. Melt this mixture over a water bath (pan with boiling water), then remove from heat and add the yogurt. In a separate bowl combine the cocoa powder with the 3 tbsp of boiling water and add it to the melted chocolate mixture; stir to combine (at this point mine looked very lumpy, I kept stirring and finally it looked like a smooth and velvety mix.) Reserve.

In a separate bowl whisk the eggs with the sugar. Reserve.

In a third bowl combine the flour, baking soda, baking powder and salt, whisk them to get rid of any lumps.

Pour the melted chocolate mixture over the egg mixture and stir to combine. Add the dry ingredients little by little and stir to incorporate everything, my batter looked a little bit thick when compared to Dulce Delight’s cake batter in the video so I added some VERY strong coffee a couple of tbs to loosen the batter.

Pour this cake batter in a pan coated with oil and flour and bake it for approximately 35 minutes in the middle rack or until a toothpick comes out clean when inserted in the center of the cake.

When the cake is cooled I filled each layer with some of the frosting and sliced strawberries, then covered the whole cake with a thin frosting layer and chilled in the fridge along with the remaining frosting.

Follow the decoration technique as demonstrated by Raiza in her video as it is very simple to make even to impatient people who have no artistic talent whatsoever like me!

I have to admit that since I started watching Raiza’s youtube channel I am more motivated to dive into the worlds of desserts, she makes it look easy and simplifies these techniques for all of us who might feel intimated by baking, also the flavors and ingredients that she uses are super delicious,  natural and did I mentioned they are delicious? go check her channel and website now!!!
